Mushrooms Stuffed with Dry Cured Ham and Azeitão Cheese

Ingredients

  • 4 Portobello mushrooms
  • 1 drizzle of olive oil
  • 2 shallots, chopped
  • 1 cheese Azeitão – Lacticínios do Paiva
  • 60 g of dry cured ham, diced
  • Pepper, as needed.

Preparation

  1. Pre-heat the oven at 180 ºC.
  2. Clean the mushrooms to remove any dirt, and remove the stem.
  3. Put the mushrooms in a Pyrex glassware and drizzle with olive oil.
  4. In a pre-heated pan, add the olive oil, shallots and ham, and let them caramelise.
  5. Dice the cheese, add the cheese to the pan and mix everything.
  6. Stuff the mushrooms with the mixture and bake them in the oven for about 20 minutes.
  7. Serve with salad.
